Meatless Meal Tuesday!



Middle Eastern Garbonzo Beans and Macaroni

You Need: 
12 oz. Macaroni twists or elbow
1 tbsp olive oil
1 tbsp butter or margarine
1 large onion chopped to 1/4 inch pieces
2 garlic cloves, crushed
1 tsp salt
1 tsp ground cumin
3/4 tsp ground coriander
1/4 tsp ground allspice
1/4 tsp coarse ground black pepper
1 can (28 oz) crushed tomatoes
1 can (15-19 oz) garbanzo beans, rinsed and drained
parsley to garnish (optional)

How To: 
  1. Cook pasta as directed.
  2. Meanwhile in a nonstick skiller, heat oil with butter over medium heat until hot and melted. Add onion to cook, stirring occasionally until tender and golden.
  3. Stir in garlic, salt, cumin, coriander, allspice and pepper.  Cook 1 minute.
  4. Add tomatoes and garbanzo beans.  Heat to boiling.  Reduce heat to a simmer for 5 minutes.
  5. Drain pasta.  Return pasta to pot. Toss garbanzo bean mixture with pasta, heat through.  Garnish with parsley.

For a Meatless meal this is seriously scrumptious! Full of flavour, and the beans are packed with protein as your meat substitute! Try it! You won't be mad about it! :)

P.S.- Garbonzo beans and CHICK PEAS are the same thing! Who knew!...I'll tell you who! My MOM! there mom, shout out...you were right...
