Soooo we thought we would get creative with our costumes this year and do something fun!!!.....

ROCK PAPER SCISSORS….






and GLUE?





HAPPY BAKING….and cooking?

Ok seriously there is ONE good thing about the weather getting chilly! HOMEMADE SOUP..and…BAKING BAKING BAKING!!! YUM!!!



PUMPKIN BREAD
3 cups sugar

1-Cup Vegetable Oil

4 Eggs

1 15oz. can of Pumpkin puree

2/3 Cup Water

3 1/2 Cups Flour

2 tsp. Baking Soda

2 tsp. Salt

1 tsp. Baking Powder

1 tsp. Nutmeg

1 tsp. Allspice

1 tsp. Cinnamon


Preheat your oven to 350. Prepare 2 – 9×5-baking pans with non-stick cooking spray. Cream sugar and oil together. Add eggs, pumpkin and water. Sift all dry ingredients together. Add dry ingredients to wet ingredients. Bake for 1 hour.....lets be honest here...who doesn't Like  LOVE snuggling up with a yummy warm slice of pumpkin/chocolatey goodness!...I know I don't mind!!









Crockpot French Onion Soup 

3 onions, sliced
3 Tbsp butter
3 Tbsp all-purpose flour
1 Tbsp Worcestershire sauce
1 tsp sugar
1/2 tsp pepper
2 32-oz cartons of beef broth

French bread, sliced on the bias
Swiss or Gruyere cheese

With your crock-pot on high, add the butter and let melt.  Once butter is melted, add in sliced onions and cover.  Cook onions on high for about 45 minutes to 1 hour or until onions are caramelized. 





Mix together flour, Worcestershire sauce, sugar and pepper in another bowl.  Slowly add flour mixture and broth to onion stirring well.  Cover and cook on low for 6-8 hours or on high for 3-4.  





To make the crusty bread, slice French bread on the bias and place slices of Swiss or Gruyere cheese on top.  Toast in oven at 250 degrees for 20 minutes.  Pour soup into bowls and top with cheesy bread slices.







This soup is actually super delish!! Try it out!! perfect for a CHILLY fall/winter day!!

ITS NEVER TOO LATE TO BE WHO YOU MIGHT HAVE BEEN


Soooo what does one do in a house all alone with almost an entire week without TV or internet (unless I steal some…shhh don’t tell!!) Well…one reads 2 books,…buys a new sketch book and gets to it!...gets lost a bunch of times trying to drive who knows where…paints nails and well just about anything to fill the time…which includes A LOT OF THINKING!...this has often crossed my mind…can’t lie about that!...

Who would I have been and where would I be if I had made different decisions and LESS mistakes?...hmph…I’m pretty positive my life would have been a lot different and I would be in a different place and time of life all together! ….then I came across the quote that is the title of THIS post…. “It’s NEVER too late to be who you might have been!”…this brought some comfort to my wondering brain….is this true though? WHY NOT? If you COULD have been someone great and you kind of went off the path why could you not find your way back and STILL be someone great!!...then I came across this inspiring quote that went right along with my thoughts!...

“Today I want you to ask yourself this ONE question.
“WHY NOT YOU?” WHY NOT YOU to do something for work that you love? WHY NOT YOU to have a healthy body? WHY NOT YOU to have healthy love?
WHY NOT YOU to be, have, or do anything you have ever dreamed?!

Why do we all find it necessary to settle in our lives? To do what is “expected” of us or whats "practical" instead of what thrills us and what brings us joy!?
If you love the idea of doing something for a living that will bring you joy and fulfillment but NOT as much money as something that’s…meh not THAT bad. WHY DO IT? Life is about being happy!, having grand experiences and LIVING! SO WHY NOT YOU? WHY NOT ME?
So get out there! Do what you love! Be who you want to be and long to be! YOU deserve all you can dream of! Because in the words of NELSON MANDELA:

3 RECIPES!


BEST BANANA BREAD


2 eggs
1/3 cup vanilla yogurt ( yes yes VANILLA yogurt! I have heard of using sour cream but seriously this addition is a GREAT one!)
½ cup vegetable oil
1 cup ripe mashed bananas
1 ½ cups white sugar
½ cup brown sugar
½ tsp vanilla extract
1 ¾  cups all-purpose flour
1 tsp baking soda
½  tsp salt

Directions
Preheat oven to 325 degrees and prepare chosen pan.
Blend together the eggs, yogurt, oil, extract and bananas in mixer with low speed.
Add in sugars and fully incorporate.  Then add flour, baking soda, and salt and mix until just combined.
Pour into prepared pan and bake 1 hour or until a toothpick insert (I would check it at 45 mins just to be safe!)









CHOCO CHOCO AND MORE CHOCO
Yield: 12 very large cookies
Ingredients:
1 cup (2 sticks) cold, unsalted butter, cubed
1¼ cup sugar
2 large eggs
½ cup dark cocoa powder
2¼ cups all-purpose flour
¼ tsp. coarse salt
1 tsp. baking powder
2½ cups semi-sweet chocolate chips
Directions:
Preheat the oven to 350˚ F.  Line baking sheets with parchment paper or silicone baking mats.  In the bowl of an electric mixer, combine the butter and sugar.  Beat together on medium-high speed until light and fluffy, 2-3 minutes.  Blend in the eggs one at a time, scraping down the bowl as needed.  Mix in the cocoa powder until well blended.  Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.  Fold in the chocolate chips with a spatula.  Transfer the dough to a work surface and knead briefly by hand to be sure the ingredients are well combined.
Divide the dough into 4 ounce portions (or divide into 12 equal pieces).  Roll each portion of dough into a ball and flatten just slightly into a disc.  Place on the prepared baking sheets, a few inches apart.  Bake 16-20 minutes.  Let cool on the baking sheets 5-10 minutes, then transfer to a wire rack to cool completely.

Soooo I don’t have a CLUE what happened to mine, but they seriously did not look like they were supposed to!...they were SO dense! More like a brownie BUT they did taste delicious…wanna know how I know?...they were gone off the table in ONE day! woo!
















Ever just have a hankering for a plain ol’ old school choco chip cookie?...this recipe pretty well hit that spot!

Ingredients

1 pound unsalted butter

1 3/4 cups granulated sugar

2 1/4 cups packed light-brown sugar

4 large eggs

3 cups plus 2 tablespoons pastry flour

3 cups bread flour

1 tablespoon salt

2 teaspoons baking powder

2 teaspoons baking soda

1 tablespoon pure vanilla extract

2 pounds bittersweet chocolate, coarsely chopped
Directions
- Preheat oven to 350 degrees. Line baking sheets with parchment paper or nonstick baking mats; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and sugars.
- Add eggs, one at a time, mixing well after each addition.
- Reduce speed to low and add both flours, baking powder, baking soda, vanilla, and chocolate; mix until well combined.
- Using a 4-ounce scoop for larger cookies or a 1-ounce scoop for smaller cookies, scoop cookie dough onto prepared baking sheets, about 2 inches apart.
- Bake until lightly browned, but still soft, about 20 minutes for larger cookies and about 15 minutes for smaller cookies.
- Cool slightly on baking sheets before transferring to a wire rack to cool completely.

When Something Bad Happens...

You Have Three Choices. You Can Either Let It Define You. Let It Destroy You. Or You Can Let It Strengthen You.



Alright so some of you may have noticed I have NOT been blogging as often as I usually do!...To be honest...my brain has just been elsewhere! But tonight I feel the need to get some feelings out there in the best way I know how!! To write them out!! ...

I love my family so much...that is NO secret! And I look up to all of them for the strength they have!
Recently though there are 2 VERY strong people that I have been such an example to me of not letting something bad destroy you but to let it strengthen you!

Erinn and Greg are 2 of my favorite people!! I have looked up to Erinn my entire life and have some really funny memories of her when we were little! When she married Greg I got a great look into the life of newly married couple and up until now I have admired their marriage so much. I know Erinn will say that their marriage is not perfect and of course I've seen the moments where Greg pushes Erinns buttons and lets be serious she does it right back...haha ....but this is also something I love and admire about them!...They get over it and they love each other so unconditionally!! In my opinion there is no better 2 people that were made for each other! :)
Recently Greg was diagnosed with a very rare brain tumor. I would be lying if I wasn't hurting and a bit angry when I found this out! Why him? riiight? Why the best guy ever and why Erinn? Oh how badly I just wanted to take that away from them!
As everything has progressed in the last few weeks our family and especially Erinn and Greg have seen nothing short of AMAZING blessings!! And what I have seen is 2 people rise above something terrible and let it strengthen them! I have really seen them take this one day at a time and just taking that time to spend with those that LOVE them so so much and spend time together also as just their little family!
Being able to see their strength on their own and together has been such a great example to me! And has shown me how important it is to spend time with family and those who love you! Also how important it is to not waste time and to do all things that will bring you joy and happiness!
I know that we can find blessings in trials and that everything will always work out!...Mostly I just want YOU TWO to know how much I love and admire you! Your strength amazes me and I love you both to the moon and back again!!

Also my prayers are with the family and friends of those 4 teenagers killed in an awful car accident a couple nights ago in my small hometown. Such a tragedy and a great loss. Those families involved, I cannot imagine that pain and I hope and pray that you will find comfort in this hard time.

Let us all be mindful of showing our love to those around us everyday! AND PLEASE PLEASE REMEMBER....



Happiness Can Be Found Even In The Darkest Of Times, If One Only Remembers To Turn On The Light.



Keep the Spirit close with you at all times and always remember and have faith in the love that Heavenly Father has for every single one of us! He is mindful of our pains and our triumphs, he will never leave you...even when you leave him....So have faith in Him...and His timing..

Giving Thanks!

ITS AUTUMN!!!!! I love autumn....just DON'T be snowing on me any time soon mmmk? ya hear me?!...oh wait you already did that!!! Yes thats right it snowed in Idaho...I almost cried!! 





Anyways!....You wanna know one of my secret thoughts?...ok so its weird but I seriously think it often!...

Well whenever we play cards as a family and I do bad on the first round I ALWAYS say..."practice round!?".....Well...Sometimes I think that this life could have the slightest possibility of being just a trial run...I know thats not true but I honestly sometimes close my eyes and hope I just get to wake up a baby and do it all over again!!...Make different choices and decisions!!

Then I just get to spend one weekend with my family and I realize that I just need to be super grateful that these people still love me as much as they do!! I LOVE my family more than anything!! And getting to spend just a few days with them is such a blessing but then so hard at the same time. I NEVER want to leave!! This past weekend was nothing different!!

THANKSGIVING WITH THE COOPER/ ROBERTS FAMILY...consists of a LOT of food!...and games and fun!!...

Best weekend ever?....hmmm YES!!! I love getting to spend time with the WHOLE fam!! I couldn't have asked for more than having Erinn and Greg and the boys home! ......So bottom line?....Be grateful for those who love you...there really is nothing better in life! =) No matter where you've been your family will be there and love you! So appreciate every moment!!...I sure do!!

ITS AUTUMN!

You know what that means?!....Cute layered cozy cloths!, boots (my fav!), scarves and hot cocoa!! ....

ALSO!!!... PUMPKIN EVERYTHING!....so here you go! My first Fall baking of the week!...Can you guess what it is!??!??!.....









PUMPKIN CHOCOLATE CHIP COOKIES! 


  • 1 1/2 c sugar
  • 3/4 oil
  • 1 egg
  • 1 c pumpkin (canned pumpkin…have you seen my garden:(
  • 2 1/2 c flour
  • 1 t baking powder
  • 1 t baking soda
  • 1/2 t salt
  • 1 t cinnamon
  • 1 t vanilla
  • 1 c choco chips
Bake at 400 degrees for 13 minutes!

they will turn out a little something like this!!...




You know you done good when you leave the "community" plate of cookies out, then leave the house for a half hour tops and they are all gone... SMILES all around!! ...now to see what the fam thinks when I bring the rest home for them this weekend!!...thats right I am going home to the weekend!!...Oh the JOY!! Seriously...the joy!!
